Cod's head consommé

Calories per portion 40 kilocalories:
Protein : 4 g / Carbohydrates : 4 g / Fats : 1 g

Preparation time : 15 minutes (in our view underestimated)
Cooking time : 50 minutes

(Serves 4)

3 Codfish heads
1/2 blackened Onion
1 Onion
1 carrot
1 Leek
1 Bouquet garni
200 g green Beans

For the clarification
1 Carrot
1 white of a Leek
200 g white Fish meat (example, whiting)
2 whites of Egg

Wash the fish heads thoroughly and let them drain for 30 minutes. Be sure to remove the gills.

During this time, wash and prepare all the vegetables.

Put the fish heads in 1.5 liters of slightly salted cold water with the onion, carrot, leek, and bouquet garni. Add the blackened onion to colour the broth. Bring to the boil and simmer for 30 minutes.

Filter the broth.

Prepare the clarification
Prepare the clarification. Chop the fishmeat very finely, add the egg-whites as well as the carrot and leek, also finely chopped. Bring the broth to the boil and pour the mixture in slowly. It will rise to the surface. Keep on a slow boil for 20 minutes.

During this time, cut the green beans into 1/4 inch lengths and cook for 15 minutes.

Filter the broth through a muslin cloth.

Presentation :
Distribute the beans in the plates and pour over the steaming broth.

The cheek-meat and tongues from the fish-heads can be prepared as a salad.
